VALLE:

Valle del Maipo is located a few kilometers south of Santiago. It is characterized by its Mediterranean climate with great thermal oscillation between day and night and average annual rainfall of 450 mm. The vineyard from which this wine comes is located in the middle of the valley, where temperatures are higher and this strain manages to mature perfectly. The soils are of medium fertility, which allows the cultivation of fruit with a high degree of concentration, and the important presence of rocks gives character and complexity to the wines that come from them.

Winemaking:

Alcoholic fermentation takes place in stainless steel tanks between 26 y 28ºC, after which maceration is done during 10 days.

CATA'S NOTES:

VALLE:

Annual rainfall totals 1,200 mm and soils are very diverse, from clayey, sandy, with stones in degradation, and derived from volcanic ash. Given the characteristics of the valley, grapes can ripen slowly, with which they preserve the freshness and intensity of their flavors and aromas

Winemaking:

They are hand-harvested with great care and selected. Then comes the pressing process, where the yolk must is separated from the juice. The must is gently racked to preserve the best golden lees. The fermentation process is done with selected yeasts. 60% of the wine is fermented in stainless steel tanks and the 40% remaining in oak barrels.

CATA'S NOTES:

Greenish-gold in color, with a very intense and highly complex aroma, that mixes tropical fruit with notes of wood and caramel. In mouth, it is an elegant wine, with balanced acidity, which makes clear its provenance from a cold climate terroir, and with a lingering ending.
