VALLE:

The Maipo Valley is located a few kilometers south of Santiago, a 133 meters above sea level. It is characterized by its Mediterranean climate with great thermal oscillation between day and night and average annual rainfall of 450 mm. The soils are of medium fertility, which allows the cultivation of fruit with a high degree of concentration, and the significant presence of rocks gives character and complexity to the wines that come from them.

Winemaking:

The grapes are destemmed, gently ground and then cold macerated at 8ºC for 5 days. Alcoholic fermentation takes place between 26 and 28ºC during 10 days. Fermentation takes place in small stainless steel tanks and two or three traditional pump-overs are carried out daily.. Post fermentative maceration during 10 days. Malolactic fermentation 100% in barrels.

CATA'S NOTES:

Ruby red with violet hues. Ripe fruits, sweet blackcurrant, herbs, dark chocolate and an elegant sensation of toast from its passage through wood. Deep mouth, with concentrated berry flavors, a touch of spice, liquorice and velvety tannins. Long and complex finish.

PAIRING:

Different types of meat, bovine, pork, lamb and game meats.

It is located at 500 km south of Santiago and its temperate Mediterranean climate receives the
influence of the ocean and the Andes mountain range at the foot of the mountain. Annual rainfall averages 1.200 mm and soils show great diversity, from clay loam to soils with rocky degradation and volcanic ash derivatives.

CATA'S NOTES:

A complex and expressive Chardonnay. Golden color like pale yellow hued flower petals with beautiful light reflections. Intense range of flavors such as citrus, lemon, minerals and some floral notes. In the mouth it is mineral and well balanced. A complex and tasty wine, with an intense and prolonged finish product of the extensive contact with its lees and that expresses the natural acidity from its cold climate terroir.

SERVICE AND PAIRING RECOMMENDATIONS

Excellent accompaniment to fish and shellfish such as salmon, corvina and conger eel, plus pasta with white sauces. Serve at 12ºC.

Annual rainfall totals 1,200 mm and soils are very diverse, from clayey, sandy, with stones in degradation, and derived from volcanic ash.

CATA'S NOTES:

Cherry red wine, with brown undertones. Expresses aromas such as ripe raspberries, sour cherry, black tea and rosehip with a background of mineral stones and litter. Deep wine in the mouth, medium bodied and very persistent, with round and structural tannins.

PAIRING

Ideal to pair with Serrano ham, white fish, salmon and exotic meats but with a delicate flavor.
